Here's a recipe on how to bake tuna with a twist.
1/2 kg. tuna
3 Tbsp vinegar
1/2 onion, chopped finely
small bunch of fresh parsley, minced
4 Tbsp calamansi
1/4 cup olive oil
salt and pepper
How to Bake:
1. Combine oil, onion, vinegar and parsley. Season to taste with salt and pepper.
2. Marinate for an hour and turn it frequently.
3. Bake the fish with some marinade for 15 minutes.
4. Arrange the potatoes on the sides of the fish. Sprinkle with marinade and juice of calamansi.
5. Bake for 35-40 minutes.
I loved it! I turned the left-over tuna into spaghetti two days after and it was really tasty versus using canned tuna.
